Cavatelli Mediterraneo
Ideal for a quick meal a typical pasta dish using fresh local ingredients:
- 200 grams of fresh pasta
- 50 grams of olive oil
- 30 centilitres of white wine
- 200 grams of cherry tomatoes (cut in half)
- a clove of garlic
- pepper
- 80 grams of fresh mussels (without shell)
- 100 grams of sword fish
- 80 grams of prawns
- 100 grams of roasted aubergines (roughly cut)
Heat the oil and garlic in a pan
When the oil is heated add the prawns, mussels, sword fish and tomatoes together with the wine, pepper and salt
Cook on low heat for 10 minutes adding a little water if mixture becomes too dry
Boil the "cavatelli" pasta until 'all dente'
Add the cooked pasta to the sauce adding the aubergines to the pan
Continue to cook until all the ingredients are mixed and cooked
Serve it on the dish and garnish with fresh basil.
